I adore hearty soups for dinner, and this crock pot vegetable lentil soup has quickly become a new favorite. It’s a simple, comforting slow-cooker lentil soup that readers love and that’s perfect for busy weeknights.

Crock Pot Vegetable Lentil Soup Recipe
This recipe first came to me in an email from Forks Over Knives. I made only a few minor adjustments to suit my family’s tastes, such as swapping the spinach for kale — I love kale in soups!

This soup is a great introduction to cooking with lentils if you haven’t used them much before. Lentils are nutritious, filling, and take on flavor beautifully in a slow cooker.
If you prefer a meaty version, diced ham or cooked sausage would be a tasty addition, but the vegetable version is exceptionally flavorful on its own.

I’m excited to experiment more with lentils in other healthy dinner ideas; they’re versatile and work well in many recipes.

Like most vegetable soups, this crock pot vegetable lentil soup is highly adaptable. Swap or omit vegetables to match your preferences and household tastes.

I was pleasantly surprised by how rich and flavorful this soup is without any meat. The combination of lentils, vegetables, and seasonings makes for a satisfying bowl that warms you from the inside out.

Even if the weather stays mild, I love any excuse to use the slow cooker. This soup is low-effort and makes the house smell amazing while it cooks.
Be sure to pin this crock pot vegetable lentil soup to your recipe board and try it alongside other favorite slow-cooker recipes when you get the chance.
