Hello! Today is a special day — I’m celebrating my birthday, the anniversary of Sweet Potato Soul, and the launch of my new vegan meal plan program, Buddhalicious. It’s been a joyful time of cooking, sharing, and creating a program built around simple, nourishing meals.
Buddhalicious focuses on easy, delicious, and well-balanced Buddha bowls. These one-bowl meals have surged in popularity because they’re versatile, quick to prepare, nutrient-dense, and full of flavor. I make a simple Buddha bowl almost every day; they usually take just 5–10 minutes to assemble and are incredibly satisfying. The combinations of grains, legumes, roasted vegetables, greens, and dressings are endless, which keeps meals exciting and varied.
The tradition behind Buddha bowls draws inspiration from macrobiotic and Zen Buddhist practices, emphasizing balance and whole foods. Recipes in the Buddhalicious plan are rooted in that philosophy, aiming to deliver wholesome, balanced meals that are easy to integrate into busy lives.
