Ingredients

  • 1 cup milk
  • 4 eggs
  • 1/2 cup sourdough discard
  • 1 tablespoon butter
  • 1 cup flour
  • 1 tablespoon sugar optional
  • pinch salt

Instructions

  • Add all ingredients to a blender and blend until smooth.
  • Set the batter aside and preheat a nonstick skillet over medium heat. Brush the skillet with butter before cooking each crêpe.
  • Pour about 1/4 cup of batter into the center of the hot skillet, then tilt and rotate the pan so the batter spreads into a thin, even circle.
  • Cook each crêpe about 45 seconds until the edges lift and the underside is golden brown. Flip gently and cook another 30 seconds, then transfer to a plate.
  • Repeat until all batter is used, brushing the skillet with butter before each crêpe. Serve immediately.
