Smores Cereal Bars — Golden Grahams, marshmallows and chocolate combined into a delicious bar!

I admit I buy boxed cereal for my kids. On busy school mornings it’s quick and easy, and depending on the brand they can be enthusiastic about breakfast. With three children in the house, even large boxes disappear fast, so I’m always on the lookout for sales.

I have a few house rules when it comes to buying cereal. First, everyone shares — no stashing a favorite box away for one child. Usually I buy two boxes of a favorite so there’s plenty to go around. Second, price matters. Since cereal doesn’t last long here, I avoid paying premium prices for a single box. My kids now help look for the best value when we shop and often place two or three boxes in the cart when they find a good deal.

One day at Dollar General my daughter spotted Golden Grahams: a large box for just $3.00. Naturally we bought two. Marshmallows were on sale too, and with those two ingredients at hand it was practically destined that Smores Cereal Bars would happen.

Smores Cereal Bars
Ingredients
- 1/4 cup butter
- 3 1/4 cups mini marshmallows, divided
- 4 cups Golden Grahams cereal
- 1/2 cup milk chocolate chips
Instructions
- Line an 8×8 pan with foil and lightly spray with non-stick cooking spray.
- In a 3-quart saucepan, melt the butter over medium heat. Add 3 cups of the marshmallows, reserving 1/4 cup for topping. Stir until the marshmallows are completely melted, then remove from heat and fold in the cereal.
- Press the warm cereal mixture into the prepared pan. While still warm, top with the reserved marshmallows and sprinkle with chocolate chips.
- Allow to cool completely. Use the foil to lift the bars from the pan, remove the foil and cut into squares. Store in an airtight container.
