I have another summer recipe for you. I’m not a fan of the intense heat, but I do love all the cool treats that come with the season. Give me a poolside chair, a wide-brimmed hat, and a cold drink, and I’m happy for the afternoon.

I recently had extra tubs of vanilla ice cream after making another recipe, and instead of snacking it straight from the container, I brainstormed an easy idea: floats. They’re quick, require minimal ingredients, and are especially satisfying on warm days.

This Peaches and Cream Float is one of the simplest recipes I’ve posted. You only need three things: vanilla ice cream, a peach drink (sparkling peach beverage or juice), and club soda, which is optional. If you skip the club soda, you technically need just two ingredients.

To make the float, start by adding a few scoops of ice cream to a tall glass. I used vanilla because it’s classic in floats, but you can swap in peach ice cream for a stronger peach profile.

Next, pour in a peach beverage. I used a peach sparkling juice for fizz and foam—this gave the float the familiar bubbly texture, so club soda wasn’t strictly necessary. I added a splash of club soda anyway because I had it on hand, but feel free to omit it if you prefer a purer peach flavor.

Finish with peach slices as a garnish if you like. The result is a light, fizzy dessert drink that’s effortless to assemble and wonderfully cooling. Now that I’ve rediscovered how easy floats are, I’ll be making them all summer long.
