Oven-Baked Pulled Pork Recipe with Tangy BBQ Pulled Pork Sauce

This Oven Baked Pulled Pork recipe is my go-to method for cooking a pork roast. It shines whether you keep the pork simply seasoned or toss it with a homemade honey BBQ sauce. Use it on salads, rice bowls, tacos, or piled into sandwiches for an easy crowd-pleaser.

Fall-Apart Tender Pork Roast

A while back I ordered a pork shoulder roast and discovered this simple oven method is the best for deep flavor and melt-in-your-mouth texture. The roast develops great flavor while the fat renders and the connective tissue breaks down, so the meat shreds easily with a fork.

If you haven’t made pork shoulder before, it’s not intimidating. You’ll need a Dutch oven (or similar heavy, ovenproof pot), a high smoke-point oil like avocado oil, and a few pantry spices. It takes about 20 minutes to prepare the roast and then it’s mostly hands-off while baking low and slow in the oven.

You can make pulled pork in a slow cooker or Instant Pot, and those variations work well — I include them below — but the oven-and-Dutch-oven technique gives the most developed flavor and the best texture.

For BBQ pulled pork, toss the shredded meat with homemade honey BBQ sauce or your favorite sauce. I prefer homemade sauces that avoid high fructose corn syrup; a simple honey BBQ made with honey, sugar-free ketchup, apple cider vinegar, Worcestershire sauce, and Dijon mustard is a great option.

What You’ll Need

  • 3–4 (about 4) pound pork shoulder roast (pork butt or Boston butt; bone-in works too but may need extra time)
  • Kosher salt
  • Paprika (optional: a pinch of cayenne for heat)
  • Garlic powder
  • Cumin
  • Onion powder
  • Black pepper
  • Avocado oil or olive oil (ghee or tallow also work)

How to Bake Pulled Pork

Step 1: In a small bowl, combine salt, black pepper, paprika, garlic powder, cumin, and onion powder.

Step 2: Cut the roast into large chunks and coat each piece thoroughly with the spice rub. Preheat the oven to 275ºF.

Step 3: Heat oil in a Dutch oven over medium-high heat. Brown the pork chunks on all sides in batches, then remove and set aside.

Step 4: Return all browned pork to the pot, cover with the lid, and transfer the Dutch oven to the preheated oven. Bake for about 2–3 hours, until the pork easily pulls apart with a fork.

Step 5: Transfer the pork to a shallow bowl or cutting board and shred with two forks. If desired, skim off any large pieces of fat and return the shredded meat to the pot to soak up the braising juices.

Step 6: Serve as-is, or toss with honey BBQ sauce for classic BBQ pulled pork.

How to Store Pulled Pork

Cool the pork completely, then store in an airtight container in the refrigerator for up to one week.

To reheat, place the pork in a lidded dish or Dutch oven with a few tablespoons of water to retain moisture and warm in a 400ºF oven for 15–20 minutes. Reheating in a skillet over medium heat works well too.

Crisp-Up Option (Carnitas style): Spread the pulled pork on a sheet pan and roast at 450ºF for about 10 minutes to create crispy edges — great for tacos or crunchy sandwiches.

To freeze: Pack cooled pork in freezer-safe containers for up to three months. Thaw before reheating.

Other Methods of Cooking Pulled Pork

Slow Cooker: Follow the recipe through searing the meat, then place browned chunks in a slow cooker. Cook on low 6–8 hours or high 3–4 hours until tender.

Instant Pot: For best browning, sear the seasoned pork in a skillet first, then add to the Instant Pot. Cook on high pressure for 40 minutes, then check tenderness and add another 20–30 minutes if needed.

Lean Option: Use a boneless pork loin roast for a leaner pulled pork. Reduce the oven time — loin will cook faster, so start checking around 2 hours.

How to Serve Oven Baked Pulled Pork

  • On a Salad: Pile shredded pork on mixed greens with tomatoes, carrots, avocado, and peppers for a hearty salad.
  • Over Apple Slaw: A sweet-tangy cabbage and apple slaw pairs beautifully with the rich pork.
  • Pork Tacos: Skip the BBQ sauce and use the seasoned pork in tacos with salsa and guacamole.
  • Rice Bowls: Serve over white or cauliflower rice with avocado and sautéed vegetables.
  • BBQ Sandwiches: Toss pork with BBQ sauce and heap it on buns with apple slaw for classic sandwiches.
