I love a great grilled cheese. There’s something comforting about hot, melted cheese tucked between slices of golden bread. With April being National Grilled Cheese Month, I decided to craft an elevated version using Arla Dofino gouda for an extra-creamy, flavorful experience.

Growing up, grilled cheese was a staple—simple, kid-friendly, and always satisfying. Now I want the same comfort but with bolder flavors. This sandwich swaps the basic white-bread-and-yellow-cheese combo for high-quality gouda, smoky roasted red peppers, and a kick of jalapeño to bring it into adulthood.

Arla Dofino cheeses are traditionally crafted in Wisconsin and made without added hormones, artificial flavors, or preservatives. They melt beautifully and add a rich, creamy note that pairs perfectly with smoky and spicy toppings.

For this sandwich I used a wedge of gouda that I shredded—shredded gouda melts evenly and gives the sandwich that irresistible gooey texture. The combination of buttery bread, melty gouda, smoky roasted red peppers, and thinly sliced jalapeño creates a balance of creaminess, sweetness, and heat.

To assemble and cook:

  • Butter one side of each bread slice evenly.
  • Heat a skillet over medium heat. When hot, place one slice of bread butter-side down in the pan.
  • Layer shredded gouda evenly over the bread, then add the diced roasted red pepper and thinly sliced jalapeño. Top with a little more gouda—more cheese only improves things.
  • Place the second slice of bread on top, butter side up. Press gently with a spatula so everything adheres.
  • Cook slowly until the bottom is golden and the cheese begins to melt, about 3 minutes. Flip carefully and cook the other side for another 2 minutes or until golden and the cheese is fully melted.
  • Remove from the pan and let rest briefly so the cheese settles, then cut in half and serve.

The result is a warm, gooey grilled cheese with a rich, buttery gouda center, bright smoky notes from the roasted red peppers, and a pleasant jalapeño bite. It’s indulgent, simple to make, and perfect for lunch or a cozy dinner.

Ingredients

  • 2 slices Gouda cheese (or 2 ounces, shredded)
  • 1 tablespoon diced roasted red pepper
  • ½ tablespoon thinly sliced jalapeño
