The Cobb salad is a classic found on many American menus, known for its generous combination of garden-fresh ingredients and savory toppings. For a seafood twist on this timeless salad, we enhanced the traditional recipe with langostinos. After enjoying our Shrimp Salad on Endive Spears recently, we wanted to highlight one of our favorite shellfish: langostinos. The result is a Langostino Cobb Salad that’s flavorful, satisfying, and very low in carbs.

Seafood Dressing
Although the salad components are typical of a Cobb — bacon, eggs, lettuce and more — the dressing ties everything together. We use a mayonnaise-based seafood sauce that pairs wonderfully with shellfish. For this salad we add a tablespoon of heavy cream so the dressing pours easily over the greens. Without the cream the sauce works great as a thick coating for seafood or as a vegetable dip; with the cream it becomes a smooth, low‑carb dressing perfect for the Langostino Cobb. Key flavors in the dressing are Old Bay seasoning and Worcestershire sauce, balanced with Dijon mustard and a splash of white wine vinegar.

The dressing is versatile: double it as a dip for grilled shrimp or use it as the base for other seafood appetizers. It pairs especially well with smoked paprika aioli or our grilled shrimp preparations.
Ingredients
This Cobb combines familiar elements—bacon and eggs for richness, lettuce for a crisp base, and avocado for creaminess. We also added cherry tomatoes, cucumber, green onion, diced red pepper and sliced radishes for color and crunch. The star addition is pre-cooked langostinos, which save time and deliver a delicate, sweet seafood flavor.

Because the langostinos are pre-cooked, assembly is quick: chop the vegetables and crisp the bacon. Bacon can be cooked ahead and stored, making the salad even faster to put together on a busy night.

You can substitute shrimp if langostinos aren’t available. While langostinos are often marketed as “little lobster” or lobster meat, they’re a crustacean more similar to certain crabs and are frequently imported from Chile. Their convenience—no shelling or deveining—makes them ideal for quick salads or a low-carb “lobster roll” on a suitable bun.

Instructions
- Seafood Dressing
- In a small bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, Old Bay, Worcestershire sauce and heavy cream until smooth.
- Cobb Salad
- Arrange a bed of chopped lettuce on each plate. Around the perimeter, place the chopped vegetables, bacon, eggs and cheddar in separate sections.
- Top the center of each salad with equal portions of langostinos.
- Serve the dressing on the side and add as much as you prefer when serving.
Chef’s Notes
- Substitute shrimp for langostinos if you prefer. Add extra heavy cream to thin the dressing to a pouring consistency.
