This recipe’s biggest advantage is how fast and uncomplicated it is. With a handful of everyday ingredients and minimal prep, you can have hot soup on the table in minutes. I turn to this soup after busy days when I want something comforting and nourishing without a long cooking time.
How to Make Simple Egg Drop Soup
This egg drop soup uses simple, accessible ingredients and can be prepared in only a few steps. Gather the following items and you’ll be ready to cook.
Ingredients
- 3 eggs
- 4 cups chicken stock or bone broth
- 1/3 cup chopped green onions or chives
- 1/2 tsp fresh grated ginger
- 1/2 tsp sesame oil
- 1 tbsp tamari sauce (or soy sauce)
Directions
- Combine the stock, green onions, ginger, sesame oil and tamari (or soy) in a medium pot and bring to a boil.
- Reduce heat to a simmer.
- Crack the eggs into a bowl and beat them lightly.
- Slowly pour the beaten eggs into the simmering broth while stirring gently to form silky ribbons of egg.
- Remove from heat and serve immediately.

Is Egg Drop Soup Good for You?
Yes. This version of egg drop soup is a good source of protein and is naturally low in carbohydrates, making it suitable for low-carb and keto-style diets. Using a quality chicken stock or bone broth also adds minerals and a rich flavour.
Does Egg Drop Soup Freeze Well?
To freeze, cool and freeze the broth only. Freeze the base in portion-sized containers, then thaw and reheat before adding the eggs and green onions. Freezing the eggs or scallions can change the texture, so adding them fresh preserves the best result.
How Long Is Egg Drop Soup Good for in the Refrigerator?
Store leftovers in the refrigerator for up to 3–4 days. This recipe yields about four servings and is usually enjoyed quickly.

For variety, you might also enjoy other simple soups such as ham and cabbage soup. Enjoy this easy bowl whenever you need a fast, comforting meal.
