I’m excited to share one of my favorite recipes: Spicy Green Tea Noodles. I love anything noodle- or pasta-related, and this dish delivers on flavor and texture while remaining light and nourishing. I’m also thrilled to team up with Le Creuset for this post. When I started this blog in 2015, working with brands like Le Creuset and Vitamix felt like a distant dream, so collaborating with Le Creuset now is especially meaningful.
Le Creuset has long been a favorite in my kitchen. Their bakeware and cookware perform beautifully for someone who cooks professionally. For this recipe I tried their nonstick sauté pan for the first time and it exceeded my expectations—nothing stuck, and cleanup was effortless. I’m sharing my honest experience because I genuinely enjoy their products.

Spicy Green Tea Noodles

Ingredients
Green Tea Noodles
- 7–8 oz green tea noodles
- Neutral oil (such as sunflower or grapeseed)
- Shavings from two large carrots (use a vegetable peeler for ribbons)
- Green parts from 3 scallions, chopped
- 1/2 cup shelled edamame
Spicy Sesame Sauce
- 2 cloves garlic
- 6 tbsp strongly brewed green tea
- 2 tbsp shoyu or tamari
- 1/2 tsp toasted sesame oil
- 1/2 tsp sriracha (adjust to taste)
- 1/4-inch square piece fresh ginger
- White part of 1 scallion
- 1/4 tsp black pepper
- Salt, to taste (optional)
To Garnish
- Sesame seeds
- Additional chopped scallions
- Cilantro, if desired
Instructions
- Cook the green tea noodles according to the package directions. Drain and set aside.
- Make the sauce by combining all sauce ingredients in a blender. Blend on high until smooth.
- Prep the vegetables: chop scallions, shell edamame if necessary, and peel the carrots into ribbons.
- Heat a nonstick pan over medium with a little neutral oil. Add the edamame and stir-fry 1–2 minutes until it develops a hint of browning.
- Add the cooked noodles, carrot ribbons, and chopped scallions to the pan. Toss to combine.
- Pour the sauce over the noodles and stir-fry for 5–7 minutes, or longer if you prefer a slightly crisp texture on the noodles.
- Serve in bowls topped with sesame seeds, extra scallions, and cilantro if you like.
- Enjoy!
