Gluten-Free Banana Bread Without Grains — Moist Simple Recipe

Recently I was searching for grain-free, unsweetened dessert options. It may not sound exciting, but I wanted something simple and wholesome. When I discovered this grain-free banana bread recipe, I didn’t expect much — yet it exceeded my hopes. Credit to Michele at Paleo Running Mamma for the original idea; the base recipe is beautifully straightforward and effective.

I’ve tried grain-free cakes and loaves before and often found them either too dense or not risen enough. This one, however, rose nicely, developed a golden crust, and tastes surprisingly sweet without any added sweeteners. It’s moist, flavorful, and satisfying — perfect for a snack or a comforting dessert.

At the moment I’m on an elimination diet after indulging a bit since moving to Manhattan. With so many tempting places to eat and plenty of social hours, it’s easy to overdo it even when you try to choose healthy options. This banana bread has been a welcome treat in my kitchen: wholesome, simple, and ready to enjoy with a hot cup of tea or coffee.

Eggs are nutrient-dense; the yolks contain many vitamins and minerals along with rich flavor. Eggs provide high-quality protein and are a traditional source of nutrients that support pregnancy and general well-being. For most people, moderate egg consumption does not raise cholesterol, and choosing organic eggs is a good option.

Almonds and almond flour are excellent gluten-free sources of protein and healthy fats. In many traditional systems of medicine, nuts are considered nourishing for the brain, heart, skin, and reproductive system. Almond flour gives this bread structure while keeping it grain-free.

Hemp seeds are often called a superfood: they’re high in easily digestible protein and provide a range of beneficial fatty acids and phytonutrients. Hemp supports immune function, skin health, and balanced hormones, and adds a gentle, nutty texture to the loaf.

All the flavor of traditional banana bread, but without grains or added sweeteners. Simple, comforting, and perfect with a warm drink.
Ingredients
  • 4 very ripe bananas, mashed
  • 4 eggs
  • 2 tsp vanilla extract
  • 1/4 cup coconut oil
  • 1-3/4 cups almond flour
  • 1/2 cup tapioca flour
  • 1/4 cup hemp seeds
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Line a loaf pan with parchment paper.
  3. In a large bowl, whisk together the mashed bananas and the eggs until smooth.
  4. Stir in the vanilla extract and the coconut oil.
  5. In a separate bowl, whisk together the almond flour, tapioca flour, hemp seeds, baking soda, baking powder, cinnamon, and sea salt.
  6. Add the dry ingredients to the banana-and-egg mixture and stir until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake until a knife or skewer inserted into the center comes out clean. Depending on your oven, this may take about 45–65 minutes; start checking at 45 minutes.
  9. Allow the loaf to cool completely in the pan on a wire rack before slicing.
  10. Slice and serve. Enjoy!
