But this gluten free Cookie Crusted French Toast pushes the idea of comfort breakfast even further by adding a crunchy cookie crust for extra flavor and texture.

Chocolate Chip Cookie Crust
My family’s favorite gluten free chocolate chip cookies are Goodie Girl Quinoa Chocolate Chip. They happen to be gluten free, but more importantly, everyone in my house loves them. My daughter gets excited whenever I bring out a go pack for a special snack, and my husband has even reached for these cookies over other treats at events.
Because my family would happily snack on these cookies all day, I wanted a fun way to include them at breakfast. The Cookie Crusted French Toast was born and has been a huge hit at our table.
Cookie Crusted French Toast
Preparing gluten free Cookie Crusted French Toast is straightforward. You make a basic egg-and-milk custard, soak slices of gluten free bread briefly, then press the soaked bread into crushed cookie crumbs to form a crunchy coating.
Kitchen tip: instead of frying the coated slices in a pan, bake them on a cooling rack set over a baking sheet in the oven.
Baking on a rack helps the bread cook evenly while preventing the cookie crumbs and chocolate chips from burning in a hot skillet. It also yields a nicely crisp crust on all sides. This recipe is a great one to make with kids — crushing the cookies in a bag is a simple and fun task for little helpers.

Recipe: Chocolate Chip Cookie Crusted French Toast (Gluten Free)

Ingredients
- 6 slices gluten free bread
- 2 eggs
- 2 tablespoons milk
- 1 tablespoon melted butter, slightly cooled
- 1/2 teaspoon vanilla
- 9 gluten free chocolate chip cookies (such as Goodie Girl)
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with foil and place a cookie cooling rack on top of the sheet.
- Crush the cookies and place the crumbs in a shallow dish.
- Whisk together the eggs, milk, melted butter, and vanilla until combined.
- Soak each slice of bread in the egg mixture for about 30 seconds per side so it absorbs but doesn’t fall apart.
- Press each soaked slice into the crushed cookies, coating both sides as desired.
- Place the coated slices on the cooling rack over the baking sheet.
- Bake for 15–20 minutes, turning once halfway through, until the crust is golden and the centers are set.
