Ingredients

  • 2 chicken breasts, bone-in, skin-on
  • 2 cups egg noodles
  • 1 1/2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 6 cups chicken broth
  • 2 cups water
  • 2 bay leaves
  • 2 fresh thyme sprigs
  • salt and pepper, to taste
  • 2 tbsp fresh parsley, minced (optional)

Instructions

  • Cook the noodles in boiling water according to package directions; set aside while you prepare the soup.
  • Set the Instant Pot to Sauté and heat the oil. Sear the chicken breasts 3–4 minutes per side, until lightly browned.
  • Add garlic, onion, carrots, and celery; sauté 2–3 minutes until the onion becomes translucent.
  • Pour in the chicken broth and water, add bay leaves, thyme, salt, and pepper.
  • Cover and secure the lid. Select the Soup setting and set the timer for 8 minutes.
  • When the cycle ends, allow a natural release for 5–10 minutes, or follow Instant Pot guidance for a quick release if short on time.
  • Carefully remove the lid. Transfer the chicken to a plate, shred with two forks, and discard bones.
  • Return the shredded chicken and cooked noodles to the pot. Stir to combine and heat through.
  • Stir in fresh parsley if using, adjust seasoning with salt and pepper, then serve.
