Slow-cooked pulled pork is a favorite from No Whine with Dinner. Made with lean pork, bell pepper, onion, carrot, and barbecue sauce, it’s flavorful, nutritious, and reliably makes plenty for leftovers.

Leftover pulled pork from the slow cooker transforms easily into pork soft tacos. This month’s Recipe Redux theme, “Cook Once and Eat Twice,” inspired turning leftovers into a quick weeknight dinner. I used leftover pulled pork to make soft tacos that came together in minutes.

The taco assembly is flexible. Warm soft corn tortillas in a skillet or microwave. Place about a quarter cup of pulled pork down the center of each tortilla and top as you like: black beans, sliced green onions, shredded reduced‑fat Cheddar, fresh or jarred salsa, a dollop of low‑fat plain Greek yogurt, and chopped cilantro. A diced avocado would be a great addition when ripe.

- FOR THE SLOW COOKER PULLED PORK
- 2½ pounds pork loin, trimmed of fat and cut into 3 pieces
- 1 large carrot, peeled and shredded (about 1 cup)
- 1 large red bell pepper, cut into ½-inch dice (about 2 cups)
- 1 medium onion, cut in half and sliced into ½-inch wedges
- One 12-ounce jar barbecue sauce
- FOR THE SOFT TACOS
- Leftover pulled pork
- Soft corn tortillas
- Black beans
- Shredded reduced-fat Cheddar cheese
- Green onions, sliced thin
- Low-fat plain Greek yogurt
- Fresh cilantro
- Place the pork, shredded carrot, diced red bell pepper, sliced onion, and barbecue sauce into a 5- or 6-quart slow cooker and stir to combine. (If you prefer, add half the barbecue sauce at the start and stir in the remainder when the pork finishes cooking.) Cover and cook on low until the pork is tender, about 6 to 8 hours.
- When the pork is done, transfer it to a cutting board and use two forks to shred the meat into pieces.
- Return the shredded pork to the slow cooker and stir so the meat is well coated with the sauce and combined with the vegetables.
- To make tacos, warm soft corn tortillas, place about a quarter cup of pulled pork down the center of each, and add your preferred toppings.
