Frozen bananas on a stick are an easy, refreshing treat. I love the sweet-and-salty contrast — creamy Greek yogurt and sweet banana meet crunchy, salty pistachios and a hint of coconut for texture and flavor.

Produce for Kids invited me to join their healthy eating initiative with Publix supporting local Feeding America food banks. I was happy to participate — I’m always excited to promote fruits and vegetables. Last year I contributed a Balsamic Beef & Fruit Kabob recipe to the campaign, and this year’s Banana Crunch Pops are another simple way to enjoy fresh produce.

Description
These Banana Crunch Pops are a refreshing, easy treat — only four ingredients and minimal prep. Skewer banana halves, dip in vanilla Greek yogurt, roll in chopped pistachios and unsweetened shredded coconut, then freeze until solid.
Ingredients
- 2 bananas, cut in half
- 1/4 cup Wonderful® pistachios, chopped
- 1/4 cup unsweetened shredded coconut
- 1/2 cup low-fat vanilla Greek yogurt
Instructions
- Line a baking sheet with parchment paper.
- Combine the chopped pistachios and shredded coconut in a shallow bowl.
- Insert a popsicle stick into each banana half, dip each one into the Greek yogurt, then roll in the pistachio–coconut mixture to coat.
- Arrange the coated bananas on the prepared baking sheet and freeze for about two hours, or until firm.
