Summer is already upon us and the 4th of July is just around the corner. Holidays mean gatherings, and the Holiday Food Bloggers are here with crowd-pleasing treats. These Chocolate Peanut Butter Cup Cheesecake Squares are perfect for parties — easy to serve, rich, and loaded with chocolate and peanut butter. I considered a red, white, and blue theme but followed my craving instead: layers of peanut butter and chocolate cheesecake over an Oreo crust, finished with chopped peanut butter cups.

The idea came from seeing layered Nutella cheesecake bars. Nutella and peanut butter are similar in texture, so swapping in peanut butter was an easy choice. To make these extra festive and indulgent, I sprinkled chopped Reese’s peanut butter cups on top for texture and flavor. These squares are portable and party-friendly — easier to eat and share than a traditional cheesecake slice.

You don’t need a holiday to enjoy these. I often bring treats to work simply because baking calms me and I love sharing. Free dessert tends to be popular, and cheesecake squares are easy to serve on an already busy plate. Baking gives me a creative outlet and a sense of connection that’s hard to beat.

Chocolate Peanut Butter Cup Cheesecake Squares

Chocolate Peanut Butter Cup Cheesecake Squares

Yield:
16 squares

Decadent layered cheesecake squares with an Oreo crust and chopped peanut butter cups.

Ingredients

  • 2 cups Oreo crumbs
  • 4 tablespoons butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla
  • 2 ounces semisweet chocolate, melted
  • 1/2 cup peanut butter
  • 1 cup chopped peanut butter cups

Instructions

  1. Preheat oven to 325°F. Line an 8×8-inch pan with parchment paper or lightly grease the pan.
  2. In a medium bowl, combine the Oreo crumbs and melted butter. Press the mixture evenly into the bottom of the prepared pan. Bake 10–12 minutes, or until set. Cool completely.
  3. In a large bowl, beat the cream cheese and sugar until creamy, about 2–3 minutes. Add the eggs one at a time, beating until smooth. Beat in the heavy cream and vanilla.
  4. Remove half of the batter and transfer to a separate bowl. Stir in the melted chocolate until fully combined and set aside.
  5. Stir peanut butter into the remaining batter until smooth. Spread the peanut butter layer over the cooled crust, then spread the chocolate batter on top. Sprinkle with chopped peanut butter cups. Bake 35–40 minutes, or until the center slightly jiggles. Cool to room temperature, then chill in the refrigerator for at least 3 hours or overnight before cutting into squares.
